Breakfasts: banana peanut-butter muffins or oatmeal; clementines
Lunches and snacks: salads (spinach, red onion, bell peppers, feta) with leftover salmon cakes or tofu and yogurt blue-cheese dressing; yogurt; clementines and apples; Special K protein bars
Dinners for the week:
- Sunday: salmon patties (oh look, Hefk already put these on the food blog; good to know they work), roasted brussels sprouts and sweet potato oven fries
- Monday: stirfry with baked tofu
- Tuesday: dinner out post-knitting, probably pho
- Wednesday: escarole and white bean soup (from Veg Times) and bread
- Thursday: wow, how do people think this far ahead... I have writing group so probably quick leftovers or a quick bite out...
- Friday: leftovers? oh wait, I think we are going to a potluck this night
- Saturday: hahaha

Funny - I didn't even realize that recipe was on the food blog already. I just had it bookmarked directly from Elise's page.
I think it's easier for me to plan that far ahead because I have way too much food in my house already. I have so much food in the pantry and the basement freezer that I pretty much just look at what's in there and then figure out what I can make with it. That's a different approach than planning ahead and then going to the store to get what you need. Not that I'm advocating the kind of food hoarding that goes on around here. :)

You are so funny! I overplan my menus and usually have tons of crap that's going soft/mushy/moldy in the fridge by the week's end so I have to come up with something stat so I can use it up before it rots. I've gotten better, though, and only plan through Thurs knowing there will be leftover and bit and bobs to eat up.
